Dreamily Delicious Broccoli
April 23, 2012
Got five minutes and no vegetables for dinner? With this recipe your broccoli will virtually cook itself whilst you are setting up the table or heating up the rest of the meal.
Recipe? Here goes:
Ingredients:
1. Two large crowns of broccoli, cut into florets
2. Canola oil-2 tablespoons
3. Have the following ready in a cup:
Scant pinch baking soda, good pinch hing (asafetida), salt to taste, 4 dry red hot peppers broken into half, with seeds
4. Water -a cup or so at the ready
Heat up oil on high heat in a largish saucepan. Add baking soda, hing (asafetida), salt and peppers together from cup. Immediately and carefully pour in the water, some sputtering may occur. Add chopped broccoli stir and cook uncovered on high heat to desired tenderness, this should not take more than a couple of minutes on high heat.
By the time dinner is ready to be served so is this buttery emerald vegetable!
Goes well with hot steamed rice and chicken/lamb curry. Or with rice and plain yogurt or raita. Or with hot chapattis or paranthas or naan, even. Or, be really daring and have it all by itself!
If you don’t like hing, you could substitute with a tablespoon of chopped garlic.
Bon Appetit!
